To celebrate Cinco De Mayo. executive Chef Ivy Stark of Dos Caminos demonstrated us steps to make guacamole. She recommends while using freshest possible ingredients and advises that California Haas avocados get the best guacamole, because there is a buttery texture and denser form.

Ingredients

two tablespoons finely chopped Cilantro leaves
2 Teaspoon finely chopped white-colored onion

2 Teaspoons minced Jalapeno or Serrano (or perhaps a mix)
1/2 Teaspoon Kosher salt
2 Large avocados, peeled and seeded. Stark recommends California Haas avocados.
two tablespoons finely chopped plum tomato (cored and seeded)
2 Teaspoons fresh lime juice.

Procedure

1. Add 1 tablespoon of cilantro, 1 teaspoon all of onion and also the minced chili, and 1/2 teaspoon of salt to some medium bowl or perhaps a mortar. Mash along with spoon or pestle until a paste is created.

2. Dice avocado and lightly fold in to the paste, departing some chunks.
