Schaum Torte:

A schaum torte or shaumtorten is really a classic Austrian dessert composed of baked meringue layers full of fruit and capped with whipped cream.

Lemon desserts are specifically popular early in the year, however this favorite garnished with fresh bananas or raspberries transcends the times of year.

Ingredients.
Meringue Covering (see recipe below)
3/4 cup granulated sugar
3 tablespoons corn starch
1/4 teaspoon salt
3/4 cup water
3 egg yolks, slightly beaten
1 tablespoon unsalted butter or margarine
1 teaspoon grated lemon peel
1/3 cup fresh lemon juice
1 cup heavy whipping cream

Instructions :
1. Bake and awesome Meringue Covering.

2. Mix sugar, corn starch and salt by 50 percent-quart saucepan. Progressively stir in water. Prepare over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir one minute.

3. Progressively stir the vast majority from the hot mixture into egg yolks stir back to hot mixture in saucepan. Boil and stir one minute remove from heat.

4. Stir in butter, lemon peel and fresh lemon juice. Press plastic wrap onto surface to help keep it from becoming dry. Awesome to 70 degrees. Spoon into covering. Cover and refrigerate a minimum of 12 hrs but no more than 24 hrs.

5. Beat whipping cream in chilled medium bowl with electric mixer on high-speed until soft peaks form. Spread over filling. Refrigerate until serving. Store covered in refrigerator.

Makes 8 servings.

Meringue Covering:
3 egg-whites
1/4 teaspoon cream of tartar
3/4 cup sugar

Heat oven to 275°F/135°C. Line cookie sheet with cooking parchment paper or heavy brown paper. Beat egg-whites and cream of tartar in medium bowl with electric mixer on high-speed until foamy. Beat in sugar, 1 tablespoon at any given time continue beating until stiff peaks form and mixture is glossy. Don't underbeat. Shape meringue on cookie sheet into 9-inch circle with back of spoon, accumulating side. Bake 1 1/2 hrs. Switch off oven leave meringue in oven with door closed one hour. Finish cooling at 70 degrees, a couple of hrs.

Makes 8 servings.

I've chose to make this torte several occasions and my visitors always like it. It appears lovely with particularly, raspberries or sliced bananas on the top rather from the whipped cream and everybody likes the idea that this can be a proper dessert.

my sister has this exact recipe aside from one factor. her recipe states to gently sprinkle the whipped cream layer with cinnamon.
