  • 1 large clove garlic clove

  • 3 tablespoons (45 mL) natural smooth peanut butter or almond butter
  • 2 teaspoons (10 mL) grated fresh ginger root (optional)
  • 3 tablespoons (45 mL) fresh lime juice, plus much more when needed
  • two tablespoons plus 1 teaspoon (37 mL) low-sodium tamari
  • one to two teaspoons (five to ten mL) granulated sugar
  • 4 ounces (115 g) gluten-free soba (buckwheat) noodles
  • Extra-virgin essential olive oil, for that noodles
  • 1 (16-ounce/454-g) bag frozen shelled edamame, thawed
  • 1 red bell pepper, diced
  • 1/2 seedless (British) cucumber, diced
  • 1 carrot, julienned
  • 4 eco-friendly onions, chopped, plus much more for serving
  • 1/4 cup (60 mL) fresh cilantro leaves, chopped
  • Sesame seeds, for serving
  • Result in the Thai Peanut Sauce:

  • Inside a small or regular mixer, combine the garlic clove, sesame oil, peanut butter, ginger root (if using), lime juice, tamari, sugar (if using), and two to three tablespoons (30–45 mL) water. Process until combined.
  • Prepare the soba noodles based on the instructions around the package. Don't overcook them—they must only take 5 to 9 minutes, with respect to the brand. Drain the noodles and rinse them under cold water. Transfer the noodles to some large bowl and toss all of them with a drizzle of additional-virgin essential olive oil (jetski from the noodles from sticking together).
  • Add some edamame, bell pepper, cucumber, carrot, eco-friendly onions, and cilantro towards the bowl using the noodles and toss until well combined.
  • Pour your preferred quantity of the dressing within the salad and toss to coat. (Any leftover dressing could keep within an airtight container within the refrigerator for approximately 7 days.)
