  • Drain the sliced onion and blend with 2 tablespoons of sugar and three tablespoons of vinegar. Put aside.
  • Season the beef with salt, pepper and chicken stock, about 50 % a teaspoon each. Add 1 tablespoons of sugar to balance the sourness of lime juice. Let sit ten minutes.
  • Mix the beef using the lime juice. Let take 15-twenty minutes. The acidity within the citrus will prepare the beef.
  • Heat some oil inside a pan and fry the minced garlic clove till golden brown. Pour within the beef.
  • To put together the dish, arrange a bed of herbs on the large platter. Top using the sweet sour onion, and so the rare beef in lime juice. Garnish with roasted peanuts, fried shallots and red pepper slices. Serve with anchovy fish sauce or soy sauce like a dipping sauce.
