
Ingredients
- two tablespoons essential olive oil
- 1 medium yellow onion, finely chopped
- 1/4 teaspoon coarse salt
- 1 garlic clove clove, minced
- 1 tablespoon tomato paste
- two tablespoons dark wine vinegar
- 1/2 teaspoon hot sauce
- 1 teaspoon granulated sugar
- 6 all-beef hotdogs
- 6 waitress or buns
- Spicy brown mustard, for serving

Directions
Heat oil in a tiny saucepan over medium-high temperature. When oil shimmers, add onions and salt and prepare, stirring from time to time, until soft and golden brown in places, 8-ten minutes. Add garlic clove and continue cooking, one minute more. Stir in tomato paste, dark wine vinegar, hot sauce, sugar, and 1/2 cup water. Provide a boil, reduce heat, and simmer, stirring from time to time, until onion relish is thick and glossy.
Bring 1 " water to some boil inside a deep-sided skillet. Add hotdogs, reduce heat, keeping water in a bare simmer, as well as heat through a minimum of ten minutes, or until prepared to serve.
Line a steamer basket with three layers of cheesecloth and put in the pot with 1/2 inch of boiling water. Place waitress or buns on cheesecloth, cover pot, and steam buns, 2 minutes.
Assemble: Place hotdogs inside buns, top with onion relish, spicy brown mustard, and sauerkraut and serve immediately.
