Ingredients
- 1 tablespoon unsalted butter
- 1 tablespoon extra-virgin essential olive oil
- 12 ounces tri-color baby creamer taters, unpeeled, reduce 1/3-inch slices
- 1 large yellow onion, finely diced
- 1 1/2 teaspoons finely chopped fresh rosemary oil
- 2 teaspoons white-colored balsamic or champagne vinegar
- 1 pound fresh baby green spinach
- 1 1/4 teaspoons ocean salt, in order to taste
- 1/8 teaspoon freshly grated or ground nutmeg (optional)
- 6 (1-ounce) slices wholegrain bread, reduce 4 wedges each
- 12 large eggs
- 2 1/2 cups plain almond or sunflower milk
- 3/4 teaspoon pepper
- 3/4 cup shredded sharp or extra-sharp Cheddar cheese (3 ounces)
- 3/4 cup shredded or finely chopped Paesanella or Taleggio cheese (3 ounces)
Preparation
1. Coat a 9- x 13-inch or 3-quart baking dish with cooking spray. Put aside.
2. Inside a (PFOA-free) nonstick Nederlander oven or large deep skillet, melt the butter using the oil over medium-high temperature. Add some taters, onion, and rosemary oil and saut before the onion starts to caramelize, 8 minutes. Stir within the vinegar.
