Ingredientes

  • 1 kg de acar impalpvel
  • 1 colher de sopa de gelatina em p incolor
  • xcara de gua gelada
  • xcara de glicose
  • xcara de glicerina
  • 1 colher de ch de essncia de sua preferncia

Modo de preparo

Hidrate a gelatina com gua e reserve durante 5 minutos, acrescente a glicose e a glicerina, misture at atingir uma consistncia homognea, adicione o acar e a essncia.

Sove a massa at ela soltar das mos e atingir uma aparncia elstica e firme. Usando um rolo de cozinha estique a massa, deixe com 1 cm de grossura, e depois coloque sobre o bolo. Com uma faca, corte o que sobrar e molde a cobertura ao formato do bolo, se necessrio use um alisador para dar o efeito completamente liso.

Em cima, voc pode confeitar como desejar lembrando que a pasta americana tambm pode assumir formas decorativas e cores de acordo com o que moldado.

Diferena entre acar impalpvel e de confeiteiro

O acar de confeiteiro possui uma textura fina e macio, ele se adequa aos ingredientes e tem uma textura de talco. Seu uso indicado em massas e recheios.

J o acar impalpvel tem 3% de amido de milho em sua composio, mais fino e no gruda. O amido vem incorporado na composio e propicia uma mistura mais homognea sendo prprio para coberturas.
