It has been one crazy week. Since relocating to free airline coast, let’s just say we haven’t been short on visitors. Being that i'm the favourite aunt&...lol&...don’t tell my other siblings, a couple of of my nephews found visit me for any couple of days.

We’re speaking about big, teen boys who like to eat. I figured Little Girl had high demands of three square meals and a pair of snacks each day. These boys be prepared to eat all day long plus they want &"man food!&" They stated, auntie we don’t want any salads&...yes, everybody knows just how much I really like my salads&...

This leaves me to creating fried chicken, which all of the boys wanted. I fried a lot chicken yesterday, I probably won't be frying chicken again until Christmas. I designed a big ole’ southern Sunday dinner yesterday.

They ate a lot food, I'm shocked I even had leftover chicken to create this pasta salad.

Fried Chicken Pasta Salad

Prepare Time: twenty minutes
Total Time: half an hour
Servings: 4-6

Ingredients:

8 bits of leftover fried chicken or 4 cups cubed fried chicken
5 eggs steamed
1 cup hellmann’s mayonnaise
1 lb rotini pasta, cooked based on package directions
two tablespoons relish
1 tablespoon creole mustard, or brown mustard
1/2 bell pepper, minced
1/2 small white-colored onion, minced
1 stalk celery diced
3 stalks eco-friendly onions, minced
1 teaspoon creole seasoning
1 teaspoon garlic clove powder
1 teaspoon onion powder
1 teaspoon pepper
pinch of red pepper cayenne (optional)
extra virgin essential olive oil to toss cooked pasta in

Bring a sizable pot of salted water to boil. Add pasta and prepare for around 7 minutes, drain, rinse, drain again and add in essential olive oil to avoid sticking, put aside.

Add eggs to some medium pot, cover with water, provide a boil, cover with lid, switch off heat, allow eggs to steam for around 15-17 minutes. Drain eggs, mash.

Inside a medium bowl, add eggs adding, mayonnaise, seasonings, relish, and vegetables. Mix well, fold in pasta and blend well. Add chicken mix well and chill or serve warm.
