Recipe Name. Ayam/Babi Buah Keluak

This is actually the traditional and well-known Nonya dish, normally obtainable in restaurants with simply chicken (ayam) and buah keluak.
Adding pork ribs (babi) is optional, but that we believe may be the traditional form.
This dish is definitely an acquired taste for individuals unfamiliar with the weird black buah keluak, but is otherwise a kind of chicken curry.

a) 1 whole chicken (a couple of-1/2Kg)
b) half Kg of pork ribs (optional)
c) 15-20 buah keluak
d) half Kg medium prawns
e) 1 stalk lemon grass ( serai )
f) 6 slices langkwas
g) 3 slices yellow-ginger root ( kunyit )
h) 6 buah keras
i) 12 red onions
j) 12 dried chillies
k) 1 " sliced bit of belachan - roasted
l) 4 Tbsp . assam

m) salt and sugar to taste

First, wash the buah keluak and soak overnight inside a bowl water.
Cut the chicken and pork ribs into medium-sized pieces.
Covering and mince the prawns and set aside.
Crack the buah keluak "nuts" and determination small opening in every nut, scoop the contents right into a bowl (keep your empty nut shells for later). Mix the minced prawns along with the buah keluak contents, pinch of salt and sugar, and pound together inside a mortar.

Crush the lemon grass.

Comments . Make sure to soak the buah keluak well, because they are poisonous when freshly selected!
