two tablespoons light soy sauce
2 teaspoons shaoxing grain wine or dry sherry
1 1/2 teaspoon corn starch
10 ounces lean pork, sliced across grain into fine 1 1/2" lengthy julienne
1/4 cup groundnut or peanut oil
5 ounces bamboo shoots, sliced to complement the pork
1 tablespoon light soy sauce
1 teaspoon sugar
4 scallions (spring onions), mainly white-colored part, cut 1" lengths

Mix the marinade ingredients together and marinate the pork for fifteen minutes.
Pour the groundnut oil right into a preheated wok as well as heat before the oil starts to smoke. Stir-fry the pork slices before the color changes, one to two minutes. Remove to some plate.
Add some bamboo shoots, and toss rapidly round the hot wok for ten to fifteen seconds. Add some soy sauce and sugar. Lower heat and simmer for four to five minutes, stirring from time to time. Enhance the heat to high. Return the pork and toss together rapidly.
Sprinkle within the scallions, and stir-fry for one minute to mix all the ingredients. Serve immediately.
