Caramelized walnuts recipe salad pomegranate
  • Pomegranate Vinaigrette:
  • 1/4 cup pomegranate molasses
  • two tablespoons dark wine vinegar
  • 1 heaping tablespoon Dijon mustard
  • 1 tablespoon honey, or even more to taste
  • Salt
  • Freshly ground pepper
  • 3/4 cup extra-virgin essential olive oil
  • Salad:
  • 6 apples (Granny Cruz, Gala, Fuji) any or a mix of all, skin left on, core removed and reduce 1/2-inch dice
  • 2 cups baby green spinach
  • 2 heads endive, thinly sliced
  • 1 cup toasted coarsely chopped walnuts
  • 3/4 pound blue cheese, crumbled (suggested: Maytag, Danish, Cabrales)
  • Salt
  • Freshly ground pepper

Whisk together the pomegranate molasses. vinegar, mustard, honey and pepper and salt inside a medium bowl. Gradually whisk within the essential olive oil until emulsified.

For that salad:

Combine the apples, green spinach, endive, walnuts and blue cheese inside a large bowl. Add some vinaigrette and toss to coat, season with pepper and salt, to taste.
