Mock chicken salad recipe chickpeas

Ingredients

  • 16 oz (2 packages) tempeh, diced into small cubes
  • 1 crisp apple, diced (Fuji or Granny Cruz work nicely)
  • cup dried fruit (I made use of goji berries, but raisins, cranberries, or chopped dateswould work)
  • cup coarsely chopped walnuts or pecans
  • 2 t curry powder
  • t salt
  • t ground pepper
  • 1 cup vegan mayonnaise (I made use of Veganaise)

Preparation

  1. Steam tempeh for ten minutes inside a steamer basket placed on the pot full of two to three inches water.
  2. Put aside and permit to awesome completely.
  3. Combine mayonnaise, curry powder, salt, and pepper inside a largebowl.
  4. Stir in tempeh, apple, dried fruit, and nuts.
  5. Cover and refrigerate until prepared to serve. You might want to add a little more mayonnaise to moisten before serving
