Cucumber tomato red onion salad recipe

Ingredients

  • 3 tablespoons white-colored wine vinegar
  • two tablespoons essential olive oil
  • 1 teaspoon sugar
  • 3 cucumbers, peeled and thinly sliced (a couple of lbs)
  • 1 (10 oz) container grape tomato plants, sliced in two
  • 1/2 medium Vidalia onion, very thinly sliced into half moons
  • two tablespoons dill, chopped
  • kosher salt, to taste
  • pepper, freshly ground, to taste

Preparation

Inside a large bowl, whisk together the vinegar, essential olive oil and sugar.

Add in the cucumbers, tomato plants, onion and dill, and season with pepper and salt. Let marinate at 70 degrees for 25 minutes before serving.

Diet (PER SERVING): 83 calories, 5g fat
