For that parcels
  • 1 x 400g tin of chickpeas
  • 100 g ( 3.5 oz ) feta cheese
  • 100 g ( 3.5 oz ) baby green spinach
  • 1 lemon
  • .5 teaspoon sweet smoked paprika
  • 4 large sheets of filo pastry (from the 270g pack)
  • 1 splash essential olive oil
For that salad
  • 1 cucumber
  • 1 small red onion
  • .5 mixed couple of fresh coriander and mint
  • 20 g ( .7 oz ) blanched almonds
  • 1 number of black olives (stone in)
  • 650 g ( 22.9 oz ) mixed ripe tomato plants
  • 1 romaine lettuce
  • 2 tablespoons of extra virgin essential olive oil
For everyone
  • 1 cup fat--free natural yogurt
  • 1 drizzle of honey

Step-by-step

  1. Drain and add some chickpeas towards the processor combined with the feta, green spinach, lemon zest and paprika, then blitz until combined
  2. Fold a sizable sheet of filo pastry in two, dollop 1/4 from the mixture in to the center, push your thumb in to the middle to create a space for that filling to grow because it cooks, then bring the edges up and incredibly loosely pinch right into a parcel. Repeat to create 4 parcels.
