Potato beet salad recipe easy

Every Easter time my Mother will make this potato salad. This isn't exactly hers but my version. Don't watch for Easter time allow it to be for your forthcoming picnic! Use new taters if you want them firm however i myself like my taters soft and so i find myself using russets, and if you do not desire a precise cut salad with firm taters use russet. OK, I ate tooooo point about this scrumptious salad. I really like pickled eggs in beet juice, which means this only agreed to be one step further in the scale.
