Thai pomelo salad recipe yam som-o

  • 3 pomelos
  • 100 g pork loin, cooked
  • 100 g peeled shrimps, cooked
  • 30 g fried shallots
  • 40 g roasted peanuts
  • 10 g batavia lettuce
  • 5 g red chili pepper
  • bunch coriander
  • For that sauce :
  • 30 g semolina
  • 20 g red chili pepper, chpped
  • 15 g peeled garlic clove
  • 15 g coriander
  • 20 cl tamarind juice
  • 3 cl lime juice
  • 3 cl nuoc-mm
  • 1 ,5 g bird pepper, chopped
  • For that tamarind juice :
  • 40 g tamarind
  • 120 g palm sugar
  • 2 g salt

Preparation

1. Prepare thevinaigrette
Crush the coriander (leaves and stems). Then, c hurry the rest of the ingredients. Stir in adding all liquid ingredients progressively.

2. Prepare the tamarind juice
Place the tamarind in 12 cl of boiling water and let awesome. Collect the juice by squeezing the tamarind seeds. add some palm salt and sugar. Boil and filter.

3. Plating. 3 minutes
Inside a bowl. pour the dressing. peanuts, pomelo, pork. shrimps and stir. Inside a shallow dish. arrange 3 small leaves of batavia lettuce. Put the shrimps and pour the mix over without overpouring. Garnish with coriander. fried shallots and chopped chili peppers. Serve cold .
