Green spinach and Feta Quinoa Salad

ingredients

  • 1 lemon (juice and zest)
  • 1/4 cup feta (crumbled)
directions
  1. Heat the oil inside a pan.
  2. Add some onion and saute until tender, about 5-7 minutes.
  3. Add some garlic clove and saute until aromatic, 1 minute.
  4. Add some green spinach and prepare until it wilts.
  5. Add some quinoa, vegetable broth, parsley, dill and season with pepper and salt and produce to some boil.
  6. Lessen the heat, cover and simmer before the quinoa is tender, about twenty minutes.
  7. Remove from heat striking it having a splash fresh lemon juice and blend within the feta.
