Ingredients

  • 1/3 cup butter, softened
  • 1/2 cup sugar
  • two tablespoons beaten egg
  • 1/2 teaspoon vanilla flavoring
  • 2/3 cup white-colored grain flour
  • 1/4 cup potato starch
  • 1/4 cup baking cacao
  • two tablespoons tapioca flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon sodium bicarbonate
  • 1/2 teaspoon xanthan gum
  • 1/8 teaspoon salt
  • 1-1/2 cups vanilla frozen treats, softened

Directions

  1. In a tiny bowl, cream butter and sugar. Beat in egg and vanilla. Combine the grain flour, starch, cacao, tapioca flour, baking powder, sodium bicarbonate, xanthan gum and salt increase creamed mixture and blend well.
  2. Visit rounded tablespoonfuls 2 in. apart onto a baking sheet coated with cooking spray, developing 12 cookies flatten slightly. Bake at 350 for 8-ten minutes or until set. Remove to some wire rack to awesome completely.
  3. Spread 1/4 cup frozen treats around the bottoms of 1 / 2 of the cookies top with remaining cookies. Wrap each in plastic wrap. Freeze for several hrs or until firm. Yield: 6 servings.
