Yes, vegetarian chicken salad is a misnomer. No chickens were injured in the building of this salad. Rather, this salad uses chickpeas! (Most likely my personal favorite bean, a minimum of for today.) )

Mike’s sister first told us about chickpea &"chicken&" salad. She made some for all of us. It had been great. We even requested for that recipe. After which, we never got around to creating it. Until yesterday, when Mike requested when we might make it for supper. I’m very glad he requested.

Vegetarian Chicken Salad

  • 2 15-ounce cans of chickpeas (
3 cups), drained and rinsed
  • 1 large stalk of celery, ends trimmed, diced
  • 1/2 small red onion, diced ( 1/4 cup)
  • 1/4 cup mayonnaise or Veganaise
  • 3 tablespoons dill relish
  • 3 tablespoons dijon mustard
  • salt and freshly cracked pepper
    1. Put the chickpeas inside a large bowl. Mash about 50 % of these.
    2. Stir within the celery and onion. Add some mayonnaise or Veganaise, relish, mustard. Mix well. Season to taste with pepper and salt. Eat plain or serve in your favorite gluten-free sandwich bread.

    It’s most likely better to consider the above mentioned proportions as general guidelines. Keep adding a bit of this and a bit of that until it tastes right. Or you were built with a chicken salad recipe you enjoyed, follow individuals proportions.

    I’ll also observe that Mike’s sister’s version adds curry powder and diced carrot. It’s another fun twist to test.
