Ingredients
  • For that sandwiches:
  • 4 teaspoons essential olive oil
  • 4 red peppers, seeded and sliced
  • 1 large yellow onion, thinly sliced
  • 4 reserved cooked chicken white meat halves, sliced into thin strips
  • 1 cup diced chorizo or andouille sausage
  • two tablespoons balsamic vinegar
  • Salt and ground pepper
  • 4 lengthy rolls (submarine or sub rolls)

Add onion and saute 3 minutes, until soft. Add sliced chicken and sausage and balsamic vinegar. Prepare 2 minutes to heat through. Season, to taste, with salt and pepper.

Using tongs, arrange mixture on rolls. Refrigerate remaining peppers for an additional recipe.

For that potato salad :

To help make the potato salad, place taters inside a large saucepan and pour over enough water to pay for. Set pan over high temperature and produce to some boil. Boil 8 minutes, until fork tender. Drain even though still warm, transfer to some large bowl and add onions, cooked bacon, vinegar, and oil. Season, to taste, with salt and pepper.
