Mango chipotle barbecue sauce recipe
Ingredients
  • two tablespoons essential olive oil
  • 1 onion, diced (about 1 cup)
  • 1 red pepper, diced (about 1 cup)
  • 3 cloves garlic clove, coarsely chopped
  • 1 teaspoon salt
  • Freshly ground pepper
  • 1/2 teaspoon ground allspice
  • 1/3 cup dark wine vinegar
  • 3 tablespoons molasses
  • two tablespoons Worcestershire sauce
  • two tablespoons lime juice
  • 1/4 cup low-sodium tomato sauce
  • 1 mango, diced (about 1 1/2 cups)
  • two to three jalapenos, minced
  • 2 boneless, skinless chicken breasts (about 3/4 pound each)
Directions

Heat the oil inside a medium-sized skillet over medium-high. Add some onions and prepare until translucent, a couple of minutes. Add some red peppers, garlic clove, pepper and salt, and allspice and prepare for just two minutes more. Stir within the vinegar, molasses, Worcestershire sauce. lime juice and tomato sauce and prepare for one minute more. Transfer the mix right into a bender and add some mango and jalapeno. Blend until smooth.

Put 1 cup from the bbq sauce right into a sealable plastic bag using the chicken and marinate for one hour.

Preheat the broiler. Place the chicken on the broiler pan and discard the marinade. Broil the chicken on high for around 12 minutes, turning once. Allow the meat rest for ten minutes before slicing. Spoon about 1/2 cup of bbq sauce within the meat slices and serve.
