  • 300g pack stir-fry vegetable with peppers and mangetout (we used Sainsbury's read-to-use baby leaf stir-fry)
  • handful tulsi leaves
  • 25g roasted peanuts, roughly chopped
  • Method

    Mix the peanut butter, chilli sauce, 100ml water and soy sauce to create a smooth satay sauce. Place the noodles inside a bowl and pour boiling water them over. Stir lightly to split up, then drain completely.

    Heat the oil inside a wok, then stir-fry the ginger root and harder bits of veg in the stir-fry mix, for example peppers, for just two mins. Add some noodles and remaining veg, then stir-fry on the high temperature for 1-2 mins before the veg are simply cooked.

    Push the veg to 1 side from the pan, then pour the peanut sauce into sleep issues, tilting the pan. Provide the boil. Mix the sauce using the stir-fry, then sprinkle within the tulsi leaves and peanuts for everyone.

    Good base recipe however a little bland without tweaking the sauce - I added the juice of two limes and 1 large clove of grated garlic clove.     The satay sauce is very good! Made my very own stir fry with mushrooms, broccoli, carrot, red pepper and chicken in toasted sesame oil, no ginger root and didnt add peanuts, put into cooked noodles for hubby and teenage boys, goes lower a goody, sensational looking satisfying.
