Jerk sauce recipe with orange juice
Ingredients
  • Smoked Jerk Pizza:
  • 2 pounds pizza, split, wing tips removed
  • 1/4 cup canola oil
  • 1/4 cup brown sugar
  • 1 tablespoon ground allspice
  • 2 teaspoons ground cascabel chile
  • 2 teaspoons ground pepper
  • 2 teaspoons kosher salt
  • Honey-Tamarind Dipping Sauce:
  • 1 cup orange juice
  • 1/4 cup clover honey
  • 1/4 cup ketchup
  • 1/4 cup tamarind concentrate
  • 1 -inch piece ginger root, thinly sliced
  • Kosher salt and freshly ground pepper
  • 1 tablespoon dark wine vinegar
  • Special equipment: 1 cup pimento wood chips, drenched not less than 2 hrs in cold water
Directions

For that smoked jerk pizza: Brush the chicken with canola oil. Combine the sugar, allspice. chile, pepper and salt. Generously coat the chicken using the spice mix.

Heat the grill to medium for indirect grilling. Add some chips towards the coals or include a smoke box and increase the grill. Put the chicken around the grill over medium heat, and prepare until golden browned and crisp, about a few minutes. Cover the grill. Grill before the chicken is brown and crisp and merely cooked through, about ten minutes. Remove from grill and put the chicken inside a large bowl.

Meanwhile, for that honey-tamarind dipping sauce: Combine 1/2 cup water, the orange juice. honey, ketchup, tamarind and ginger root in a tiny saucepan and produce to some boil. Lessen the heat to medium and prepare until slightly thick, about fifteen minutes. Remove in the heat and take away and discard the ginger root. Season with pepper and salt. Whisk within the vinegar. Keep warm.

Add some honey-tamarind dipping sauce towards the bowl of chicken and toss to coat. Sprinkle with salt and transfer to some platter.
