We used medium shrimp (41-50 per pound) with this recipe, but little cocktail shrimp would work. Use heavy whipping cream to prevent curdling when mixed and heated using the fresh lemon juice.

Ingredients

  • 3/4 cup heavy whipping cream
  • 1/4 cup chicken stock
  • 3 Tablespoons of fresh lemon juice
  • 3/4 pound angel hair pasta (also known as capellini )
  • Salt and pepper
  • 1 pound raw medium shrimp, peeled and deveined *
  • 1/2 cup (loosely packed) chopped parsley
  • 1/4 cup (loosely packed) chopped chives
  • Zest of the lemon
  • 1/2 cup freshly grated mozzarella dairy product

*To defrost frozen shrimp, place these questions bowl of cold water.

Method

1 Bring a sizable pot of salted water to some boil. (1 Tablespoons of salt for each 2 quarts water)

2 Inside a smaller sized pot, heat the cream, chicken stock and fresh lemon juice to some low simmer. Simmer lightly for three or four minutes.

3 Add some angel hair pasta towards the boiling water.

4 Add some shrimp towards the simmering lemon cream sauce. Stir well and give a pinch of salt and pepper. The shrimp should prepare in comparable time because the angel hair pasta, about three or four minutes.

Midway with the cooking, stir within the parsley and chives.

5 Once the pasta is completed, drain and set it inside a large bowl. Stir within the shrimp and lemon cream sauce, the lemon zest, and the majority of the Parmesan.

Divide into servings, and top using the remaining parmesan.

Note, when the resulting mixture appears too dry, just give a little water or cream. Whether it appears too wet, don't be concerned, the pasta will absorb the sauce.
