Poor mans crab cake recipe zucchini casserole

My little garden didn't prosper this season, the rabbits ate my string bean plants and also the cukes never correctly matured. The main one factor that's thriving though may be the zucchini. I've plenty of zucchini,

l-o-t-of zucchini.

So, what about an enjoyable method to apply certain up, Faux Crab Cakes!

Now, living around the New England I have had some mighty fine crab cakes, shall we be held saying this normally takes their place? Definitely not! However I am saying a great method to sneak much more zucchini to the plates of ones own and buddies. And in the end, is not that what summer's about:At)

Poor Man's Crab Cakes -adapted from Laura Williams' Musings
1 1/2 C shredded zucchini, patted dry
1 C breadcrumbs
2 Tblsp grated onion
2 Tblsp flour
1 Tblsp mayonnaise
1 teaspoon Old Bay Seasoning-I made use of 2 teaspoon
2 eggs, slightly beaten
1/2 teaspoon dry mustard-optional
1 Tblsp very finely diced red (preferably) or eco-friendly bell pepper-optional
Oil for frying, maybe 1/4" in pan
1. Combine everything except oil.
2. Heat oil and visit rounded spoonfuls into oil and fry both sides until golden and crispy.
3. Serve with tartar sauce.

Notes:
  • I squeezed a few of the liquid from the squash.
  • You can include anything you as with crab cakes, I added just a little diced bell pepper and ground mustard.
  • I designed a half batch and taking advantage of single 1/4" scoop, it made 12 cakes. Just flatten them out once they are within the fry pan.
  • Used my homemade jalapeno relish for that tartar sauce, excellent!

  • This can be a novelty dish that's fun for advertising media are from suggestions for the zukes. For those who have room in what you eat for any fried food and additional zukes to utilise I only say try it out. The tartar sauce really makes them good.

Well, I really like crab cakes. but virtually anything fried having a dipping sauce is ok beside me! Our local fancy place helps make the best zucchini blossoms, full of plant cheese and tempura fried. Yummy

You've solved an issue for me personally. My freezer is packed with grated Zuc. from last season and that i don't have any want to make bread at this time. this is perfect. These can make a pleasant side dish and can be great with a few minced pork or perhaps bacon bits put in. Thanks!

I vaguely remember making something similar to this however i am thinking about trying your recipe. It's most likely that old Bay Seasoning that provides the crab taste. Yours definitely look scrumptious!

I have to pass this onto my BIL that has received enough zucchini you'll always remember. Good idea Lynn.

Ok last one I really like me some zucchini,love this recipe.No garden this season for all of us nor my dad-n-law,(I MISS THAT),we'd they are driving a couple of miles through the rear forest and purchase tomotoes for canning,it had been fun though,loved MOORES FARMS,MANOR GEORGIA.
