Easy healthy chicken tortilla soup recipe
Ingredients
  • two tablespoons vegetable oil
  • 1 small onion, diced
  • two tablespoons minced garlic clove
  • 2 jalapenos, finely diced
  • 6 cups low-sodium chicken broth
  • 1 (14.5-ounce) can fire roasted diced tomato plants
  • 1 (14.5-ounce) can black beans, rinsed and drained
  • 3 chicken breasts, boneless and skinless
  • 2 limes, juiced, plus wedges for garnish
  • Salt and freshly ground pepper
  • 1 cup roughly chopped fresh cilantro leaves
  • 1 (8-inch) flour tortilla, grilled, reduce thin strips
  • 1 avocado, pitted, sliced
  • 1 cup shredded Monterrey cheese
Directions

Inside a large saucepan heat the vegetable oil. Add some onions and prepare for just two minutes. When the onions have softened add some garlic clove and jalepenos and prepare for an additional minute. Pour the chicken broth, tomato plants and beans in to the pot and produce to some boil. Once in a boil lower heat to simmer and incorperate your chicken breasts. Prepare the chicken for 25 to 25 minutes. Once chicken is cooked remove from pot. When awesome enough to deal with shred it and hang it aside. Add lime juice and fresh cilantro towards the pot. Inside a serving bowl give a mound of shredded chicken. Ladle soup over chicken and top having a lime wedge, grilled tortilla strips, avocado slices and cheese.
