INGREDIENTS:

For That SOUP:
1 cup leeks, chopped
1 cup carrots, chopped
1 cup celery, chopped
two tablespoons vegetable oil
2 cups button mushrooms, quartered
1 tablespoon garlic clove, minced
1 teaspoon thyme
1/4 teaspoon nutmeg
1/4 teaspoon pepper
5 (14ounce)cans Manischewitz® Poultry BROTH (8 cups/64 ounces)
2 cups cooked poultry meat, cubed
1/2 cup soy milk
Pepper and salt to taste

For That Poultry PASTRAMI MEATBALLS:
1 (5 ounce) box (2 individual packets) Manischewitz® Reduced Sodium Matzo Ball Mix
4 eggs
4 tablespoons vegetable oil
4 slices poultry pastrami, diced
1/2 cup onion, finely chopped
1/4 cup celery, finely chopped
1/4 cup dried cranberries
1 tablespoon dried oregano
1 tablespoon dried parsley
Pepper and salt to taste

PREPARATION:

To Organize SOUP:
Inside a large skillet, saut leeks, carrots and celery in vegetable oil until soft. Add mushrooms and garlic clove, stirring frequently. Sprinkle thyme, nutmeg and pepper over vegetables. Prepare for one minute stirring constantly. Add broth, poultry and soy milk to pot and gradually provide a boil. (Refrigerate if preparing ahead.
To Organize Poultry PASTRAMI MATZO BALLS:
Inside a bowl, blend 4 eggs and 4 tablespoons vegetable oil. Add items in TWO packets Manischewitz® Matzo Ball Mix and stir having a fork until evenly mixed. Put aside when you prepare the meat and vegetables.
Spray a skillet with non-stick cooking spray. Saut the poultry pastrami, celery, and onion until vegetables are soft. Add some dried cranberries, oregano, parsley, pepper and salt.
