This classic Greek soup—avgolemono—is simple, easy, and amazingly flavorful. Egg thickens a soup of grain or orzo cooked in broth and flavored with lemon. Ingredients
  • 6 cups chicken broth or vegetable broth
  • 1 cup grain or orzo
  • one or two eggs
  • one to two Tablespoons fresh lemon juice
  • Fine ocean salt and freshly ground pepper

Preparation
  1. Bring the broth to some boil. Add some grain or orzo, reduce heat to keep a stable simmer, and prepare before the grain or pasta is tender.
