Creamy Roasted Asparagus Soup

This Creamy Roasted Asparagus Soup recipe is scrumptious! Enjoy the health advantages of your favorite flavorful eco-friendly veggies - roasted inside a soup!

Ingredients:

  • 2 lbs asparagus
  • 1 large yellow onion, peeled and halved
  • 4 cloves garlic clove, not peeled and left whole

  • 5 cups chicken broth

  • 1/2 cup half and half (or heavy cream)
  • 1 Tablespoons of. dry vermouth (or dry white-colored wine)

Directions:

Preheat the oven to 375 F levels. Line a rimmed baking sheet with parchment paper or aluminum foil. (Or coat with a decent layer of cooking spray.)

Arrange the asparagus, onion halves and garlic clove cloves around the baking sheet, and brush with essential olive oil. Sprinkle with a few pepper and salt, after which bake for around forty-five minutes. Turn the onions when they get excessively dark at the base.
