Copycat Panera Fall Squash Soup Recipe


The components you will have to help make your Fall Squash Soup are very simple. I grabbed a little Butternut squash when you shop at Kroger and that i had anything else on hands within my kitchen. Which means this soup was quite affordable.

INGREDIENTS
1 Butternut Squash
1 small Onion
2 tablespoons of Essential Olive Oil
15 oz Pumpkin Puree
2 cup Vegetable Broth
1 1/2 cup Apple Cider
1 1/2 cup Heavy Cream
2 tablespoons of Honey
1/4 teaspoon Curry Powder
1/2 teaspoon Cinnamon
2 teaspoon Salt
1/2 teaspoon Pepper
Pumpkin Seeds (for garnish)

DIRECTIONS
Preheat oven to 450.
Peel and seed squash and reduce chunks.
Peel and quarter onion
Toss squash and onion in essential olive oil and pepper and salt to taste.
Prepare for 25 minutes.
Let it awesome a minimum of ten minutes.
Puree in blender or mixer.
Inside a large sauce pan, combine squash puree, pumpkin puree, vegetable broth, apple cider and cream.
Provide a minimal boil over medium heat.
Add honey and spices and simmer for ten minutes.
Garnish with pumpkin seeds.
