Rustic Potato Soup, or caldo verde, may be the national dish of Portugal, so when developing our recipe, we found this rib-sticking, one-pot meal really requires no work. Since the garlicky, spicy flavor of these two sausages is comparable, we substituted kielbasa for harder-to-find Portuguese linguia sausage. We partly mashed part of the taters to thicken the soup, cooked the leeks and kielbasa together, then stirred them in to the taters, broth, and kale.

Serves four to six

Allow the taters simmer within the broth when you prep and prepare the rest of the ingredients. Since the kielbasa is very salty, no added salt is essential.
