Investigatory project carrot soup recipe
  • 15ml/1tbsp vegetable oil
  • 1 onion, chopped
  • 450g/1lb carrots, washed and sliced
  • 1 clove garlic clove, crushed
  • 5ml/1 teaspoon ground coriander
  • 1.2 ltr/2 pints vegetable stock
  • 45ml/3tbsp chopped fresh coriander
  • squeeze of fresh lemon juice
  • freshly grated nutmeg to taste
  • salt and freshly ground pepper
  • single cream for everyone if loved

1. Heat the oil inside a large pan, add some onions, carrots and garlic clove, saut for 4mins, until they're starting to soften although not colour. Stir in the earth coriander and lots of seasoning and prepare for 1min.
2. Add some stock and produce towards the boil, cover and simmer for 20mins or before the carrots are actually tender. Stir within the fresh coriander.
3. Whizz the soup having a stick blender or transfer to some mixer. Add some fresh lemon juice and nutmeg to taste and adjust the seasoning as necessary. Reheat until just hot although not boiling and serve. Garnish having a swirl of cream if loved.
