Ingredients
  • 2 pounds Yukon gold taters, peeled and reduce 3/4-inch chunks

  • Crispy Shallots:
  • 1 1/2 cups essential olive oil or vegetable oil
  • 3 tablespoons unsalted butter
  • five to six shallots, peeled and sliced into thin rings
