Pumpkin and chorizo soup recipe

ingredients

1 tablespoon oil
1/3 cup onion, chopped
5 cloves garlic clove, peeled and finely chopped
5 cups chicken stock or broth
3 cups pumpkin puree
1 pound chorizo sausage cooked and coarsely chopped
2 taters, peeled and diced into 1/2 inch cubes
two tablespoons oregano
1/2 teaspoon cumin
3/4 cup heavy cream

Garnish
1/2 cup cilantro, chopped
1/2 cup onion, chopped

directions

Heat the oil inside a large pot. Saute the onions and also the garlic clove over medium heat for around one minute. Carefully include the broth, pumpkin, chorizo and taters. Stir within the oregano and cumin. Provide a boil after which turn lower to some simmer.
