2 1/4 cups cooked mashed sweet taters
3/4 cup granulated sugar
1/2 cup firmly packed brown sugar
1/2 cup instant french vanilla pudding mix
3/4 cup evaporated milk
2 large eggs, 70 degrees
6 tablespoons butter or margarine, softened
1 teaspoon ground cinnamon
1 1/2 tablespoon vanilla flavoring
1 unbaked cake covering (9 inch size)
Inside a large bowl combine all ingredients and beat at medium speed until well blended. Spread evenly into unbaked cake covering.
Bake at 450 levels F. for ten minutes. Reduce temperature to 350 levels F. and bake for 40 minutes longer or until set. Awesome on wire rack.
If preferred, garnish with whipped cream, raspberries and mint leaves.
