This recipe for sweet and sour fish originates from Eastern China.
Serves four to six
- 1 pound fish fillets, for example cod, haddock, or ocean bass
- 1 teaspoon salt
- 1 large egg white-colored
- 1 tablespoon corn starch
- 1 cup chicken broth
- 1 tablespoon light soy sauce
- 1 tablespoon Chinese grain wine or dry sherry
- two tablespoons tomato paste
- 3 tablespoons grain vinegar, or red or white-colored wine
- 3 tablespoons granulated sugar
- 1 tablespoon corn starch combined with two tablespoons water
- 4 ounces mangetout (snow peas)
- 1 red bell pepper
- 1 tablespoon ginger root, finely chopped
- two tablespoons eco-friendly onions, chopped diagonally
- two to four cups oil for deep-frying

Rinse the fish fillets and pat dry. Reduce 2-inch squares. Add some fish towards the marinade ingredients, making use of your fingers to combine within the ingredients and adding the corn starch last. Marinate the catch fifteen minutes.
