My first attempt for a sweet bread (I'm Trinidadian) it was moist and scrumptious and overall a great recipe for sweet bread. I place a half cup extra of coconut, cus I really like plenty of coconut within my sweet bread. I believe the freshly grated coconut gave this sweet bread its moistness (in blender, do strain liquid before contributing to batter). The fruit peel gave a powerful citrus taste, however, many people do like this, I'd put less the next time. It did bake more than time suggested. I'd certainly make use of this recipe again with my alterations. Thanks Wizzy
Exactly what a lovely smell even though it is baking. Very solid loaves. We'd one for supper and DH required someone to work to see his co-workers. I'd rate this greater (and when possible would edit my current rating afterwards), when the ingredients were listed more coherently. I needed to REWRITE the components within the margin to make feeling of the cooking directions. Also, as noted with a previous reviewer (which Someone said), the recipe lists as making just one loaf, however, this makes TWO very solid, dense loaves. to ensure that skews the diet details. I substituted cherry-flavored cranberries for that real factor (missed that on my small grocery list!), and used fresh orange zest instead of the mixed peel and a few candied pineapple pieces. The golden raisins I made use of gave the loaves a really nice look too. This is really an excellentEqualsmouth watering 4- or 5-star recipe---when the ingredients list is altered!!
(Though I managed to get is presented, I am departing no stars since i should have done a problem). It is really an interesting quick bread recipe! I made use of a mix of candied pineapple, papaya and mango. It's almost a fruitcake. I loved the cherries and raisins. Nice cherry-coconut taste and. I'd provide 5-stars for taste. My dough was very difficult to combine and I needed to bake it far longer then recommended. I'll allow it to be again to determine which went wrong this time around.
