Ms kays sweet potato pie recipe
Ingredients
  • 4 medium sweet taters
  • 1/2 stick butter, softened
  • 1/4 cup sugar
  • 3/4 cup brown sugar
  • 2 eggs, beaten
  • 1 teaspoon pure vanilla flavoring
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground ginger root
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground allspice
  • 1/2 teaspoon salt
  • 3/4 cup evaporated milk
  • 1 unbaked cake crust
  • Walnut whipped cream, optional, recipe follows
  • Walnut Whipped Topping:
  • 1 cup heavy whipping cream
  • 1/4 confectioners' sugar
  • two tablespoons walnut syrup
Directions

Preheat oven to 350 degree F.

Bake sweet taters for one hour within the oven on the baking sheet. When done, let awesome. Scrape the pulp from the skin, transfer to some large bowl, and mash. Put aside.

Inside a medium bowl, beat together butter, sugar, and brown sugar until creamy. Add eggs, vanilla, cinnamon, ginger root, nutmeg, allspice and salt. Add evaporated milk and stir mixture into sweet taters. Beat along with mixer until smooth and pour into an unbaked cake covering.

Bake below rack of oven for one hour or until center of cake is firm. Serve warm. Add dollop of whipped cream if preferred.

Walnut Whipped Topping:

Inside a medium bowl, beat together whipping cream and confectioners' sugar. Add walnut syrup. Beat together until soft peaks form.
