Sweet imli ki chutney recipe

Tamarind chutney (Imli chutney). an easy yet scrumptious condiment, is essential dip for most Indian snacks. Even if this recipe is simply by mixing jaggery and spices into tamarind puree, its tasty secret is based on utilization of black salt. 1/2 cup Tamarind (Imli)

3/4 cup finely chopped Jaggery (Gur or Gud)

1 teaspoon Red Chili Powder

1 teaspoon Cumin Powder

1/4 teaspoon Black Salt (sanchal/kala namak)

Directions:
  1. Deseed tamarind and boil it in 1 cups water over low flame for 8-ten minutes. If you don't wish to boil tamarind, then soak it in 1 cup warm water for half an hour.
  2. Allow it to awesome at 70 degrees. If this cools, prepare tamarind pulp by using any of the two methods given below.

    • Mash tamarind in water and strain via a metal colander and discard fibers. Press mashed tamarind with spoon while straining to obtain more pulp out.
    • Crush steamed tamarind into puree using mixer-grinder, strain through fine sieve and discard any residues.
  3. Transfer tamarind pulp to pan and add jaggery inside it. Take it to boil and prepare on medium flame until jaggery dissolves completely.
  4. Add red chilli powder, cumin powder, black salt and salt, mix well. Taste for sweetness and increase the jaggery if you wish to make sweeter chutney.
  5. Switch off flame and let it awesome at 70 degrees.
  6. Transfer prepared sweet tamarind chutney to airtight container and store in refrigerator for approximately 30 days for anytime use.

  • Change the amount of jaggery based on your taste. More jaggery can give sweeter taste and fewer jaggery can give sour taste.
