Apple-Buttered Sweet Taters

Ingredients

  • 3 pounds sweet taters, peeled and reduce 1-inch pieces (8 cups)
  • 2 medium Granny Cruz and/or any other tart cooking apples, cored and reduce wedges
  • 1/2 cup dried cherries or dried cranberries (optional)
  • 1 cup whipping cream
  • 1 cup apple butter
  • 1 1/2 teaspoons pumpkin cake spice

Directions
