Yummy! The batter is thick but nonetheless designed a tender muffin. I made 12 large muffins plus they were scrumptious. Nice healthy. Very easy. I peeled, finely chopped the sweet taters and microwaved. Didn't take lengthy to organize. Love this recipe. The next time I'll add cranberries and perhaps make 18 muffins. Thanks.

I've chose to make this recipe two times now--once with sweet taters and when with canned pumpkin puree. Both switched out excellent although I believe the yams flavor shines through a little more compared to pumpkin. I substituted agave nectar for that sugar, and something tablespoons of of nonfat plain yogurt for that oil. They are very moist, not very sweet along with a much healthier form of cornbread. Went great with chipotle bbq chicken.

Well after studying all the reviews I'd high wants this recipe. I'm not just one to criticize others however i chose to make this and adopted the recipe exactly and required the muffins to some family Thanksgiving dinner. Everybody who attempted it required one bite and didn't wish to finish it. I'd a lot of leftovers and that i requested a couple of people when they loved they and them stated it had been ok. Pointless to state, I'm a little embarrassed and won't make these again.
