  1. Heat oven to 400°F.
  2. Within the bowl of the mixer, combine the Bruce’s Yams, eggs. egg yolk and evaporated milk and beat smooth.
  3. Add sugar, vanilla, salt, butter, corn starch and spices still mix until creamy.
  4. Scoop mixture in to the cake covering (spread evenly with the rear of a spoon) and put on the baking sheet.
  5. Bake for fifteen minutes then lower heat to 325?F and then bake for the next 30-35 minutes (or until center has set).
  6. Serve with whipped cream, if preferred.

Yield: 6-8 slices
