Grated carrots -2 cups
Milk -3/4 cup
Sugar -1/4 cup
Ghee - 2 1/2- 3 tablespoons of
Cashew nuts -10
Raisins -2 tablespoons of
Cardamom Powder - 1/4 teaspoon
Wash, peel your skin and grate carrots finely. (make use of the small hole for grating)
Heat 1 1/2 tablespoons of of ghee and fry the raisins on low heat until they puff up. Remove and it aside. Within the same pan, fry cashew nuts until golden brown.Remove from pan.
If needed, add another teaspoon of ghee and fry the grated carrots on low flame stirring continuously for several-4 minutes.
Add milk towards the carrots and pressure prepare for 1 whistle.
When the pressure subsides, open the oven and prepare on high flame stirring continuously until all of the milk evaporates.
When the milk dries up, add sugar and then prepare on medium flame before the mixture is thick.
Give a tablespoons of of ghee and prepare for any further 3-4 minutes stirring continuously before the mixture thickens.
If using, you can include little grated unsweetened khoya at this time and prepare for couple of more seconds. I didn't add.
Add cashew nuts, raisins, cardamom powder, mix well and prepare for an additional 2-3 seconds.
Serve this scrumptious gajar ka halwa hot or warm. Used to do the entire process within my small pressure oven.
