Eco-friendly Tomato Relish

Eco-friendly Tomato Relish
1/3 c. salad oil

About 4 hrs before serving or as much as 7 days ahead: In 8-quart Nederlander oven or heavy saucepan over medium heat, in hot salad oil, prepare onions and garlic clove until tender, stirring from time to time. Add eco-friendly tomato plants and remaining ingredients over high temperature, heat to boiling. Reduce heat to medium-low prepare, uncovered, 2 hrs, stirring from time to time, until mixture thickens.
Ladle into jars or freezer containers, awesome to 70 degrees, then freeze. Or ladle into sterilized jars and process inside a boiling-water bath for half an hour.
