Ingredients
- two tablespoons extra-virgin essential olive oil
- 1/2 large red onion, thinly sliced
- Kosher salt
- 1 cup dry dark wine
- two tablespoons dark wine vinegar
- 2 teaspoons honey
- 1 thyme sprig
- Freshly ground pepper
- 2 pounds ground sirloin
- 4 ounces Stilton cheese, reduce 8 slices
- 8 small brioche or kaiser rolls, split
- 8 Boston lettuce leaves, for serving
Steps to make this recipe
- Inside a skillet, heat the oil. Add some onion along with a pinch of salt and prepare over moderately low heat, stirring, until softened, about ten minutes. Add some dark wine, vinegar, honey and thyme and simmer, stirring, before the liquid has evaporated, fifteen minutes. Season the onion jam with pepper and salt discard the thyme.
