Sensational Double Layer Pumpkin Cake

Ingredients

  • 4 ounces cream cheese, softened*
  • 1 tablespoon milk or half-and-half
  • 1 tablespoon sugar
  • 1 1/2 cup thawed Awesome Whip Whipped Topping
  • 1 Keebler Ready-Crust Graham Cracker Cake Crust (6 ounces)
  • 1 cup milk or half-and-half
  • 2 packages (4-meal) Jell-O Vanilla Flavouring Instant Pudding and Cake
  • Filling
  • 1 can (16 ounces) pumpkin
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger root
  • 1/4 teaspoon ground cloves
  • *Useful Hint: Soften cream cheese in microwave on HIGH 15-20 seconds

Instructions

Mix cream cheese, milk and sugar in large bowl with wire whisk until smooth. Lightly stir in whipped topping. Spread below of crust. Pour 1 cup milk into bowl. Add pudding mix. Beat with wire whisk until well blended, one to two minutes. (Mixture is going to be thick.) Stir in pumpkin and spices with wire whisk mix well. Spread over cream cheese layer. Refrigerate a minimum of 3 hrs. Garnish with a lot more whipped topping and nuts if preferred.
