Im just wondering something. when u say remove from heat, place preserves in jars and canopy. then you definitely say pour preserves into sterlizied jars. im confused. Any clarification? Im just a little slow today. exactly what do you mean by cover? And arent your preserves already in jars? appears in my experience you'd pour preserves into sterilized jars seal and process lacking the knowledge of the 2 step process. thanks
