Kielbasa and Red Cabbage Skillet with Apples

Serves: 4-6 servings

  • 2 baking apples (we used Cortland), divided
  • two tablespoons butter
  • 1 cup onion, diced
  • 2 pound mind of red cabbage, cored and chopped into bite sized pieces
  • cup any fruit juice
  • 1 tablespoon granulated sugar
  • 3 tablespoons dark wine vinegar
  • 2 teaspoons kosher salt
  • teaspoon freshly ground pepper
  • 1 pound Kielbasa, reduce slices
  1. Peel, core and dice among the apples.
  2. Inside a large skillet with super tight lid, melt butter over medium high and add onion. Prepare for 2 minutes and add cabbage, any fruit juice, sugar, vinegar, salt, pepper and diced apple. Cover and prepare over medium heat for fifteen minutes.
  3. After fifteen minutes add kielbasa, cover and prepare for ten more minutes.
  4. While kielbasa is heating, core but don’t peel last apple. Reduce 16 wedges and increase dish in the finish. Stir once and serve. The feel is a mixture of crunchy apples with soft cooked cabbage and kielbasa.
