Stilton sirloin burgers with onion jam recipe

Ingredients

  • two tablespoons extra-virgin essential olive oil
  • 1/2 large red onion, thinly sliced
  • Kosher salt
  • 1 cup dry dark wine
  • two tablespoons dark wine vinegar
  • 2 teaspoons honey
  • 1 thyme sprig
  • Freshly ground pepper
  • 2 pounds ground sirloin
  • 4 ounces Stilton cheese, reduce 8 slices
  • 8 small brioche or kaiser rolls, split
  • 8 Boston lettuce leaves, for serving

Steps to make this recipe

  1. Inside a skillet, heat the oil. Add some onion along with a pinch of salt and prepare over moderately low heat, stirring, until softened, about ten minutes. Add some dark wine, vinegar, honey and thyme and simmer, stirring, before the liquid has evaporated, fifteen minutes. Season the onion jam with pepper and salt discard the thyme.
  • Light a grill. Generously season the sirloin with pepper and salt. Mix lightly, then shape into eight 1-inch-thick patties season again with pepper and salt. Grill the burgers, turning once, until charred around the outdoors and pink within, about 3 minutes per side. Right before the burgers are carried out, top all of them with the Stilton. Transfer to some platter. Gently grill the buns. Set the burgers around the buns. Top using the onion jam and lettuce and serve.
