Alugadde palya tastes great like a side dish with any types of dosas(Indian crepes). I normally add couple of vegetables to really make it more healthier. Here's my form of the tasty alu sabzi.

Steamed mashed taters: 2 cups

Steamed vegetables: 1 cup (I normally use frozen carrot, corn eco-friendly peas mixture).

Onion: 2 medium-sized (sliced)

Eco-friendly chilli paste: 3/4 teaspoon (Adjust according to your demands)
Ginger root-Garlic clove paste: 1 teaspoon
Oil: 1 tablespoons of
Cumin seeds: 1/2 teaspoon
Mustard seeds: 1/2 teaspoon
Urad dal: 1 teaspoon
Curry leaves 6-8 nos
Salt: Based on taste

For garnishing:
Coriander leaves: 2 tablespoons of
Fresh lemon juice: 1 teaspoon (optional)


Method:
  • Boil the vegetables permit them to awesome (This task isn't needed for frozen vegetables).
  • Meantime, heat an extensive pan add oil into it. When oil is hot, add mustard seeds, cumin seeds urad dal. When mustard seeds splutter dal turn golden brown, add curry leaves eco-friendly chilli paste. Saute for 30secs.
  • Towards the tempering, add some onions saute till onions become translucent. Add some ginger root-garlic clove paste saute for just two-3mins.
  • Drain water directly from the steamed vegetables. Add some drained vegetables towards the pan.
  • Mash the taters lightly add some taters towards the pan.
  • Add salt, turmeric. Mix well.
  • Prepare it on the medium heat for just a few minutes.
  • Remove from heat. Add some fresh lemon juice garnish with coriander leaves.
  • Chopped eco-friendly chillies might be used rather of eco-friendly chilli paste.
  • Ginger root-garlic clove paste might be overlooked(if you don't prefer it).
  • If you work with frozen vegetables, thaw them and add together with onion
